If there’s one thing we like eating all year long, it’s a big bowl of guac — creamy, rich and slightly salty with a mild bite from aromatics. Scoop it onto a big tortilla chip, and it’s heaven!
We believe guacamole is best served freshly made, just minutes from kitchen to table. Here’s a simple recipe that you can customize to suit your taste. Want more heat? Toss in another jalapeno. Not a cilantro fan? Give parsley or even tarragon a whirl. Guacamole is a very forgiving dish, so you can add more of this, less of that and still plate a dish that will impress your guests.
First, gather your ingredients: Five avocados, one medium onion, one tomato, a big handful of cilantro, one lime and salt.
Dice the onion and tomato; finely dice the jalapeno. Optional: Save a few pieces of tomato for garnish.
Remove and discard the avocado’s pit (technically a seed, and avocado is a fruit, for those who like to geek out about these details) by making a lengthwise cut, slicing all the way around until the knife hits the seed. Twist the avocado into two halves. Carefully hold the half with the seed in it, whack the knife blade into the seed and then twist and lift it out.
Place everything in a large bowl and squeeze an entire lime over the ingredients.
Coarsely chop the cilantro and add it to the bowl. Salt to taste.
Plate about one cup of guacamole and garnish with tomato if desired. This recipe makes approximately four servings (serving size is one cup). Serve with your favorite tortilla chips.
