Everything’s coming up a rainbow of colors in our rooftop garden! Veggies and herbs are bursting forth and right onto your plate at The Gables at Chadds Ford.
Our beautiful garden has tripled in size since last year. We’re cultivating raised beds and planters for a cornucopia of freshness you’ll find in our salads, sides and entrees. We start many of those tender shoots in the hydroponic tower, where they’re nurtured until ready to head into the soil.
“Right now we’re bringing in lots of peppers, tomatoes, kale, lettuces, basil and parsley,” said Chef Dave Wenerd. “That influences everything on our summer menu, especially the specials.”
Dave spends the first hour of his day in our little slice of heaven on earth checking out what Mother Nature has to offer. He totes big pans up to the roof and picks what he plans to work with that day.
“You’ll also see new takes on some of my favorites,” Dave added. “I’m tweaking the chimichurri to highlight our own smoked peppers, putting a twist on just-picked fried green tomatoes and experimenting with different romaines to grill.”

Dave is also busy canning tomatoes and preserving summer’s goodness to last into winter’s unforgiving days. That includes dehydrating herbs to make his signature spice blends, too.
“Toward the end of the season we see more lettuces and greens,” Dave added. “I hate to see the season end!”
