The smoky essence of peat is considered a central characteristic of Islay malts. Many describe it as a “medicinal” flavor. Islay malts also possess notes of iodine, sea weed and salt.
Highland single malts are diverse, from light and grassy to heavily sherried. A typical Highland whisky will have notes of fruitcake, malt, oak, heather, dried fruit and smoke.
Whiskies from this region are generally light and grassy or rich and sweet.
The two distilleries located on the islands produce full-bodied, balanced whiskies with smoky, salty characteristics.
