Family Dinner at Home Made Easy: How to Make The Gables’ Pappardelle Caprese Pasta

Stuck in the house but love to cook? Here’s a recipe that’s easy to pull together, and it feeds a family of four. Bonus: It scales up well for larger families, too!

There are four parts to this dish, which means you can keep the kids occupied by enlisting them as sous chefs. Depending on age and skill-level the kiddos may:

  • Measure out most items.
  • Mix breadcrumbs and cheese together, and spread them on the baking sheet.
  • Sprinkle breadcrumbs with salt, pepper and parsley to finish them off.
  • Watch that the garlic doesn’t burn.
  • Process the pesto ingredients in the food processor or blender.
  • Slice veggies.
  • Stir and finish the pappardelle.

Our Executive Chef Darryl Butts loves this dish because it’s a one-plate meal and includes pasta, lots of veggies, and fresh cheese. He notes that you can always add a “mild” protein, such as a white fish, chicken or tofu. Pro tip: Stick with mild proteins only, as a hearty fish, like salmon, a robust soy like tempeh, or beef could overwhelm the dish’s variety of flavors.

Let’s get started! Here’s the recipe: 

The Gables’ Pappardelle Caprese Pasta

Serves 4

Parmesan Breadcrumbs

Prep time: 5 minutes

Cooking time: 5 to 10 minutes

Total time: 10 to 15 minutes

Ingredients:

  • 3/4 cups of panko breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon each of salt and pepper
  • 1 1/2 cups chopped parsley

Method:

1. Preheat oven to 350°.

2. Mix bread crumbs and cheese together, then place on a greased baking sheet and bake until golden — not brown.

3. Let cool, then sprinkle with salt, pepper and parsley and mix.

Garlic Oil

Prep time: 5 minutes

Cooking time: 10 to 15 minutes

Total time: 15 to 20 minutes

Ingredients:

  • 2 cups olive oil
  • 16 cloves garlic, peeled

Method:

1. Combine oil and garlic in a small sauce pan.

2. Heat over a medium flame until garlic turns golden in color; remove from heat and let cool. 

3. Once cool, pour oil through a sieve into a storage container; discard garlic.

Food safety note: Leftover homemade garlic oil must be kept refrigerated. 

Pesto

Prep time: 10 minutes

Total time: 10 minutes

Ingredients:

  • 2 ounces fresh basil
  • 2 ounces fresh parsley
  • 4 cloves fresh garlic, peeled
  • 2 tablespoons Parmesan cheese
  • 2 cups olive oil

Method:

1. Combine all ingredients in a food processor and blend until smooth. No food processor? Use a blender (may take a few blends to process).

Bring it all Together: The Gables’ Pappardelle Caprese Pasta

Ingredients:

  • 2 ounces garlic oil
  • 4 ounces asparagus tips
  • 2 ounces mushrooms, sliced (you choose the type)
  • 6 ounces spinach, chopped
  • 2 tablespoons pesto
  • 12 ounces pappardelle pasta, cooked according to package directions 
  • Salt and pepper, to taste
  • 6 ounces cherry tomatoes, sliced in half
  • 4 ounces fresh mozzarella, diced
  • 2 ounces Parmesan bread crumbs

Method:

1. Pour garlic oil into saute pan; heat on medium until hot.

2. Add asparagus tips and saute for 15 seconds.

3. Add mushrooms, spinach, pesto, and pasta.

4. Stir thoroughly, then add salt and pepper, and tomatoes.

5. Pour into bowl and top with mozzarella and Parmesan bread crumbs.
